Persian Food - Khoreshte Bademjan (Eggplant Stew)

I grill the eggplant on my pancake griddle without a drop of oil - the eggplant is perfect and the food isn't greasy - as eggplant can act as a bit of a sponge.


The finished food - delicious.

I'd like to try some persian cooking! I made the pitas you posted a while back and they were delicious but they puffed up a lot so they didn't really look flat like pitas. Is that how yours turned out?
